Asian Chicken Stir Fry

Servings: 2-3
2 chicken breasts
2.5 cups frozen stir fry vegetables
salt and pepper for seasoning
1 tsp liquid aminos (or low sodium soy sauce)
1 tsp sesame oil
1 tbs minced ginger
1-2 garlic cloves

1. Season chicken lightly with salt and pepper and grill until cooked thoroughly.
2. Remove chicken from pan to cool. As chicken cools, prepare sauce. Mince ginger and garlic cloves. Mix liquid aminos, sesame oil, ginger, and garlic into a small bowl.
3. Slice chicken into thin strips.
4. In a large skillet or wok, cook frozen vegetables for ~5 minutes. Pour in chicken and sauce and mix well until chicken and vegetables are coated evenly with the sauce. Serve and enjoy.
